Bika Ambon, a Special Delicious Cake from Medan City


There are so many kinds of traditional food in Indonesia. They are culinary heritages that come from various regions in Indonesia. Each of them has its own uniqueness and taste. Speaking about delicious cakes, Bika Ambon is one of cakes from Indonesia that has the unique delicacy and physical appearance. This cake is made of sago flour as its main composition instead of wheat flour. The tender texture of this cake is perforated at its surface. When this cake is sliced, the tiny fibers appear at its section texture. This cake is usually golden yellow colored, but now there is also the green and brown one.

Bika Ambon is made of ingredients such as

egg yolk, sago flour, refined sugar, and condensed coconut milk which is boiled with pandanus leaf, citronella, and citrus leaf. The other ingredients are ‘biang’ ingredients comprised of a tablespoon of yeast, refined sugar, and wheat flour; and 3 tablespoon of warm water. The delicious taste of Bika Ambon is more appetizing with the fresh citrus leaf aroma. Bika Ambon is usually sold in pandanus taste, although currently the other tastes such as durian, cheese, and chocolate are also provided. This cake is suitable to be served with tea.

Although its name contains word “Ambon”, Bika Ambon is known as a typical food souvenir from Medan instead of Ambon. At Medan City, North Sumatra, the most popular sales area of Bika Ambon is Mojopahit Street at Medan Petisah. There are at least 40 shops selling this cake. This area is a recommended place to eat out in Medan. It is important to notice that the endurance of Bika Ambon in its best condition is usually up to 4 days. After that, the cake usually starts to stiffen, reducing its delicacy.
